28th August 2021 – (Hong Kong) Moments Together, whose sister restaurant in Shanghai has received critical acclaim, opens its doors in ELEMENTS TST. At Moments Together, Hong Kong’s newest upscale Shanghainese & Hunan restaurant, and the 34th restaurant in the Taste Gourmet Group portfolio, the culinary masters, impeccable service, and exquisite interiors all combine to create an atmosphere that sets the table for an evening to remember. Moments Together married and re-iterate the best of Shanghai and Hunan cuisines and its dishes are a compilation of the most classics and traditional flavours with a contemporary twist.
The carefully curated designer dining room impresses diners as soon as they walk through the doors. While the dedicated culinary team is hard at work creating exceptional dishes, the hosts usher guests into an exclusive oasis. The interiors evoke a sense of cozy earthiness, and incorporate elements of natural grey stone, a warm oriental colour pallet, and modern, comfortable furnishings.
The menu at Moments Together showcases expert culinary craftsmanship and features the very best regional ingredients prepared with a unique flair. Chef Lau, head chef of Moments Together – Hong Kong has used his 20 years of experience in Japanese, and Cantonese culinary styles to reinterpret classic Shanghainese dishes into modern, healthy meals. From familiar ingredients like goose, duck, beef, and chicken to exclusive additions including pomfret, abalone and sea cucumbers, the menu brings together a range of flavours and experiences.
Of particular note are the signature dishes at Moments Together. Chef Lau intermingles the flavours of fresh pomfret with its delicately sweet, white flesh and transforms it into a sensory experience. When the delicate glass dome is lifted from the dish in an Instagram-worthy display, the earthy, floral mist of smoked Jasmin tea leaves wafts into the air and tantalised the palate, revealing a generous portion of smoked pomfret.
Notable dishes we have tried include Smoked pomfret with Jasmine Tea Leaves (HK$168), Rolled Chinese Cabbage with vinegar (HK$88), Xiao Long Bao (HK$68 for 4), Chili Mala Crispy Free Range Chicken (Spicy) (HK$198) and Deep fried Vegetarian Spring Roll (HK$88 for 4).
For dessert, diners should not miss its Double-boiled egg white, glutinous rice dumpling with coconut milk (HK$68 per serving) and pair with its Rose Lychee Premium Chinese Tea (HK$68 per person).
In keeping with trend-conscious cuisine, one of the eight signature dishes in Hunan cuisine, steamed fish head with chili is elevated to a luxurious, visually stunning dish. Traditional steamed fish are enrobed with a wild array of colourful chilis. The visual wow factor is complemented by the addition of luscious fresh lobster.
The most impressive dish on the Moments Together menu is one of the most complex dishes in Asian cuisine. The Signature wok-fried Buddha over the wall, popular in Hokkien province, boasts more than 20 different ingredients including abalone, fish maw, sea cucumber, and goose feet. Chef Lau takes the ultra-traditional dish and modernises it by using French cooking techniques to enrich and enhance the broth. The addition of chopped chilis brings in a taste of Hunan-style cuisine to the dish and enhances all of the ingredients.
