The shop, which opened several years ago on Caine Road, quickly gathered a loyal following thanks to its commitment to authentic flavours rarely found in the city. Chef-owner Claudio, who moved from Florence to Hong Kong more than two decades ago after marrying his local wife, brought with him both a wealth of hospitality experience and a heartfelt dedication to sharing the tastes of his hometown.

Although compact, Florence Trippa has always offered a welcoming atmosphere, with most guests opting for takeaway but a few seats at the entrance for those wishing to enjoy their meal fresh and hot. The kitchen is a hive of activity, with the aroma of freshly baked rolls and gently stewed tripe filling the air. Each portion of Lampredotto—featuring beef’s fourth stomach slow-cooked for five hours with vegetables and finished with Claudio’s own herbaceous green sauce—captures the rustic simplicity and unique charm of Florentine street food. The tripe is exceptionally tender, the seasoning delicate, and the bread as soft as any you would find in Tuscany, offering a taste experience far removed from heavier local braised or curried styles.
