The menu offers a wide selection of meat, from wagyu beef to pork, chicken to seafood. A serving of the Kobe striploin and ribeye is priced at HK$688, while over 15 premium cuts of A4 and A5-grade Japanese wagyu are also available, ranging from HK$158 to HK$488 per dish with their special homemade sauces. Those looking to add a dose of freshness to their meal can choose from over a dozen Japanese vegetable and salad options.
A number between 1 and 5 then follows this letter – this is the “Quality Grade.” Four criteria determine how high the quality grade is: marbling, meat color and brightness, firmness and texture of meat, and colour, luster, and quality of fat. As such, A5 is the highest grade that Japanese wagyu beef can get and, also, the most expensive.
