2nd December 2019 – (Hong Kong) Tokyo ramen sanctum Ramen House Konjiki Hototogisu, a Bib Gourmand Michelin restaurant since 2015, celebrates its awards in Michelin star in 2019 and 2020 with the first outpost in Hong Kong. The restaurant will open its doors tomorrow at IFC mall in Central. ‘Konjiki Hototogisu’ means ‘Golden Cuckoo”, it symbolizes Chef Yamamoto’s philosophy: ‘Always work hard and strive for self-improvement so that one day you would emerge to a precious gem, like the rarest Golden Cuckoo’. With a prominent presence in Japan, Ramen House Konjiki Hototogisu is widely-acclaimed for of its ‘Clam Soup’ – a sumptuous taste now ready to conquer gastronomes and ramen fans in town! 

Instantly Addictive ‘Golden Soup’

The most enticing of all about Ramen House Konjiki Hototogisu is its homemade broth with no MSG added, in particular, the coveted ‘Golden Soup’ which has the fish-based and pork-based stocks blended together with the secret clam soup base cooked with the freshest catch to create a new seafood and meat trio. Each drop is refreshing on the palate, with the salty taste of the ocean and a rich concentration of flavour. Topped with truffle sauce and porcini oil, ramen at Ramen House Konjiki Hototogisu is a perfect balance of tastes and umami without leaving an oily feeling on the palate like traditional ramen does. The sweet and light essence of the ingredients marries perfectly with homemade noodles made of wheat flour from Hokkaido and the fully seasoned sous-vide pork slices with a tender bite! Meanwhile, the ACM water filtration system ensures the same quality for drinking water and soups as the Tokyo restaurant.

Shoyu Hamaguri Soup Ramen (HK$128) It’s Konjiki Hototogisu’s signature ramen which made from clams soup, pork broth and Japanese secret soy sauce. It innovates a new mixture of seafood-styled and animal-styled ramen with sweet and salty flavor. More importantly, three unique and precious ingredients, black truffle sauce, dried porcini powder  and dried porcini mushrooms oil are added on top before serving and undoubtedly, stand out among others.

Diners can also try Shio Hamaguri Soup Ramen (HKD$128) which is served with extra imported sea salt from Japan. Konjiki Hototogisu also provides classic pork broth (Tonkotsu) soup base which had been apparently simmered for more than 8 hours – Tonkotsu Original Ramen (HKD$110). Tonkotsu Smoke and Pepper Ramen is created as the advanced extension of Tonkotsu original ramen (HKD$115). Guests can also choose the other spicy selection, Tonkotsu Spicy Ramen (HK$115). Other snacks and bites on offer are Fried Hanamidori Chicken (HK$88), Melted Cheese Tonkatsu (HK$70)
