Bretzel Bistro Alsacien in Sheung Wan serves Tarte Flambées from Alsace region

31st July 2021 – (Hong Kong) Breizh Limited group started its first project Bouillon Bistro Parisian in late 2020 which is located at the charming corner of the No. 6 Pound Lane, Sheung Wan. It offers a chic bistro cuisine created by Chef Johan Ducroquet, oscillating between revisited French classics, rascal dishes, generous and creative recipes, as close as possible to ultra-fresh organic and artisanal products that arrive every day for suggestions throughout the seasons.

Riding on the success, the group decided to open another new bistro, Bretzel Bistro Alsacien, in the same neighbourhood spot in July 2021 to introduce authentic classical dishes from Alsace region and family-owned wineries to the customers in the city.

The main dishes served here are Tarte Flambées. It looks like a pizza, it cooks like a pizza, but don’t make the mistake of actually thinking it’s a pizza. Tarte flambée, the Alsatian flatbread topped with fromage blanc (a fresh, tart, spreadable cheese), thinly sliced raw onions and bacon, is as Franco-Germanic in flavour as can be. This method delivers a classic tart, made on pizza dough rolled very thinly and cooked on a blazing hot oven. Diners should try both its savoury Tarte Flambée and sweet Tarte flambée sucrée.

For starters, diners can try the Foie Gras Terrine (HK$188) or Salade dee Cerevelas (HK$138).

Recommended dishes include La Traditionnelle (Cream, bacon, caramelised onion, HK$128), La Primeur (Butternut puree, caramelised onion, emmental, chestnut and red onion, HK$148) and La Saumon Fume (Cream, red onion, smoked salmon, dill and capers, HK$178). For desserts, go for La Banane Chocolat (HK$108) or La Pomme Cannelee (HK$108).

Its Chef Johan Ducroquet said that, “I have Alsatian roots and we have lived with my wife and sommelier Cristina in Alsace for a while, so when with my partner Gregory Alexandre considered in expand our business we thought, why not to bring to Hong Kong those authentic classical dishes from Alsace. Bretzel is a sort of little brother from Bouillon, we hope that Bretzel will bring to customers the true flavours from this wonderful gastronomic-wine region.”
